Norma Fleming Murray (1951-2017) was a Pensacola businesswoman who owned the series of Norma's restaurants, which she started in 1988 with Norma's Potpourri Café, a lunch counter in the D.H. Holmes now Dillard's department store in Cordova Mall. Initially hired as a cook in the D.H. Holmes cafe , she assumed ownership of the cafe when D.H. Holmes was going to close the cafe. She later added four locations in downtown Pensacola, Norma's on the Run on Palafox Street, Norma's at the Cultural Center, and Norma's on the Bay and a short lived cafe in the old Sun Trust Bank Building . Her last restaurant was Norma's at duh on 9th Avenue. Before entering the restaurant business, she was a teacher for seven years and a stay-at-home mom for another seven.

In 2002 she published a cookbook, As Always, containing more than 100 of her recipes.

In 2007 she purchased the site of the William F. Lee House, demolished after Hurricane Ivan, from West Florida Historic Preservation, Inc. for $625,000. The lot at Alcaniz Street and Bayfront Parkway was previously considered by Robert de Varona for the site of his Varona's restaurant, but when he chose a different location, Murray was able to buy it for her Lee House Bed & Breakfast project, planned to open in 2009.

In 2013 she opened Norma's at duh, located at 501 N 9th Ave.

Norma Fleming Murray died at age 65 on September 23, 2017, after a recurrence of cancer. Norma's at duh, the last of the Norma's restaurants still in business, closed on October 20, 2017.
