May 31 - The Pensacola Pelicans defeat the the El Paso Diablos 5-4 in El Paso, TX. May 31 - Fiesta of Five Flags 2007 begins with the "Surrender of the City" to DeLuna LVII, Robert Leidner. May 31 - The Institute for Human and Machine Cognition wins an Excellence in Economic Development Award from the U.S. Department of Commerce. May 30 - A World War II practice bomb found at Pensacola Beach results in the evacuation of Portofino Island Resort & Spa. May 30 - Mary Ham is sentenced to two years in federal prison by U.S. District Court Judge Casey Rodgers for her role in a tax-evasion scheme led by her boyfriend, Fred "Sport" Suttles. May 30 - Three members of the Baker prostitution ring are sentenced to prison by Escambia County Circuit Court Judge Nickolas Geeker. May 28-30 - Each game of the Pensacola Pelicans' three-game series against the Fort Worth Cats was rained out. The games will be made up as part of three doubleheaders later in the season.
