Emory signed with the Green Bay Packers as an undrafted free agent fullback prospect (5'-11", 251 lbs.) in 1997. In a preseason game against the Oakland Raiders on August 8th, Emory scored a touchdown from a 3-yard pass from Steve Bono in a 37-24 win. Later in training camp, he was placed on waivers. In October 1997, the Dallas Cowboys signed him to the practice squad where he was re-united with his running back brother Emmitt Smith. Emory spent the remainder of the Cowboys’ regular season with the team and waived after the Cowboys season concluded. The Packers then signed him to their post-season practice squad. On January 28, 1998 the Packers once again signed him to a free-agent contract for the coming season. Again, he was waived in training camp. Emory was then drafted by the Scottish Claymores of NFL Europe where he wore his brother's jersey number 22 for the 1999 season. The Claymores alternated playing home games at Murrayfield Stadium, Edinburgh and Hampden Park, Glasgow. The team began with a 4-2 record to fall to 4-6-0 for the season. Emory would rush five times for 25 yards and zero TDs, and three receptions for 20 yards.
